Chocolate & Mandarin Cake

A delicious simple chocolate sponge cake with a hint of orange flavour.

Flour (self raising)    180 grams 0 0
Margarine (cooking)    180 grams 0 0
Sugar (caster)    180 grams 0 0
Eggs (room temperature)    3 individual 0 0
Cocoa Powder    28 grams 0 0
Orange (freshly squeezed)    1 individual 0 0
Cooking Chocolate    if required 0 0
Mandarin Oranges (segments)    if required 0 0

1. Place the softened margarine or butter into a mixing bowl and beat together until light and creamy.

2. Gradually add the sugar to the mixture and beat together well.

3. Wash and dry the fresh orange and finely grate the zest, then place to one side. Squeeze the orange juice.

4. Gradually add the beaten eggs to the cake mixture making sure not to curdle.

5. Add the orange juice and zest at this time ensuring the mixture is not too wet.

6. Mix in the flour and coca powder as gently as you can to keep the cake mixture light and fluffy.

7. Place into a lightly greased and lined sandwich or loaf tin and bake in a moderate oven, Gas Mark 4 or 180°C for approximately 30 minutes.

8. Test if the sponge is cooked by gently pressing the centre with your finger. If it is cooked it will rise back up.

9. Leave the cake in the tins for a few minutes to cool. Gently turn them out onto a wire rack.

10. Decorate with melted chocolate and mandarin segments if required. 11. Serve with custard.
